018 - Winter Pepper Ale

One of the classic ale strains from a Northwest U.S. Brewery. It produces a malty and mildly fruity ale with good depth and complexity.

Flocculation: high
Attenuation: 67-71%
Temperature Range: 65-75° F (18-24° C)
Alcohol Tolerance: approximately 10% ABV

We prepared ahead of time a tincture of white pepper (~1 ounce) and juniper berries (~1 ounce).  We removed the white peppercorns from tincture but left juniper berries intact.

At 60 minutes we added the tincture and right before the finish we added 2 ounces juice of galangal and .5 ounces of turmeric juice.
