WYEAST 1214 This one kind of got away from me during the boil. I ended up adding some top water to bring the post boil to 5 gallons. I was in a rush and didn't take a gravity reading after doing this ($#%&*). I continued to have sparging problems and ended up with a lot of gunk in the fermenter. The smack pack never really inflated and the fermentation seemed to start a little late. It seems to me that I remember hearing that Belgian yeasts have a tendency to be tempermental. I still have high hopes for this beer, though, despite the brewing challenges. |
