February 10, 2010 010 30 Days Amazingly clean and crisp. Slight tart-ish flavor but well within the style. Ready to drink and so young.. does really well with a good amount of CO2... have not bottled yet, but kegged half is divine. 
October 31, 2009 005 150 days Dry. mellowing out a lot but stil very similar to previous tasings. 
August 2, 2009 005 - Yeti 74 Days Probably our most well-balanced beer yet. No discernable flaws other than that aging would give it an "aged" taste and feel. 
August 2, 2009 004 - St. Bernardus 84 Days Really rounded out! The only off-notes now are slight cidery-tartness... which I am guessing would also dissapate over time. Really good beer! 
July 19, 2009 005 - Yeti 60 days very subtle oak; roasty;  
July 12, 2009 005 - Yeti 43 days very slight oak flavor- not overwhelming; despite its roastiness, the flavor is bright; much potential 
July 12, 2009 006 - Arrogant Bastard 32 days very cidery; hardly any hop flavors; we'll see... 
July 12, 2009 004 - St. Bernardus 62 days Cidery flavor has gone down, kind of sweet- absolutely no bitterness, no notable flavor flaws- just needs to age 
July 2, 2009 003- Fat Tire 67 days More even tasting, still cidery, funny black things floating in it that look like coffee grounds. Excellent aroma- sweet. 
June 28, 2009 003 - Fat Tire 63 Days Really rounding out.. Still tastes mildly cidery but that flavor is blending more with the flavor of the hops to the point where I am wondering the if the flavor that I am tasting is really just a strong citrus or grapefruit flavor giving by the hops. We did a side-by-side with an actual Fat Tire. The actual Fat Tire had that disctinctive biscuit flavor and also the yeast tasted much "cleaner" like somerwhere between the Abbey yeasy that we were using and a typical California yeast. 
June 28, 2009 005 - Yeti 29 days Initial smell was like "bog water"... kinda of like decay.. but that smell was not present in the flavor. Could have been on my hands or something. Otherwise the beer was much improved. rounder and less acrid. Still strongly bitter, but now tastes more like hop bitterness than "charred" bitterness. Very promising aside from that initial smell. 
June 21, 2009 004 - St. Bernardus 45 days Very smooth, slight cidery flavor. For being only 45 is extremely palatable. 
June 21, 2009 003 - Fat Tire  60 days Fairly smooth and rounded. Still tastes a little cidery. Needs more time. Banana is definitely mellowing out with warmer conditioning. 
June 14, 2009 005 - Yeti 14 days Really sharp. Tastes like charcoal, more subtle notes of chocolate, espresso, and carmel taste like they may come out later when aging mellows out the sharpness. 
June 2, 2009 002 135 Days More rounded altogether, distinct but not unpleasant banana, bitterness not overwhelming and entirely tolerable 
February 18, 2009 002 30 Days Strong esthers/banana tones, overwhelmingly bitter from orange peel
